I recently started listening to the Inside Analog Photo podcast. Catching up on the various episodes, there are some great interviews with some amazing photographers. If you do any darkroom work, the Steve Anchell (author of the Darkroom Cookbook) interview is a lot of fun -- very plain-spoken guy, I like his style. ;)
